My stall at Ravensdale Lodge..

Wanted to show yous all some of the things I've made that I'm gonna sell at my stall in Ravensdale Lodge Equestrian Centre this saturday from 9 o'clock. Also gonna be selling my paintings. Its gonna be a big horse riding show on this friday and saturday. Hope yous like what I made, and if you're around come up and have a look. Think it will be a great day out!

17. mai i Irland / 17. May in Ireland




Just wanted to show yous all how much fun we had on Norways national day here in Ireland.. The lovely cake, my great friend Petra made for the party. We had a great day with good food and games for the kids. We had egg and spoon race, race with feet tied together and hit Tony and Brian with water ballons.

Ville visa dekan alle kor moro me hadde det her i Irland paa 17. mai.. Den flotte kaka, laga mi gode venninde Petra (nam nam..). Me hadde ein super dag med god mat og leiker for ungane. Det var egg og skjei lop, kapplop med beina knytt i saman og kasta vannballonger paa Tony og Brian.

Tirsdagen min.. My Tuesday..





I dag har eg hatt ein koselig tirsdag som starta med frokost med min kjaere paa ein kafe.. Heim, gjorde litt husarbeid. Sydde ferdig ein kanin og noen jordbaer som eg skal selge paa min neste marknad (29 mai Ravensdale Lodge). Tok Ellen Anna og Marcus ned til skoytehallen, so dei kunne staa litt paa skoyter. So for turen heim for aa laga middag. Laga ein kjempegod dessert, som eg tenkte eg skulle gje dekan oppskriften paa.. Anbefales paa det sterkeste.. Nam, nam;)


Today I had a great day that started with breakfast with my love at a cafe.. Home, did a bit of housework. Finished sowing a bunny and some strawberries that I am gonna sell at my next market (29. of may Ravensdale Lodge) Or if anyone wanna buy it before - Let me know..;) Took Ellen Anna and Marcus to the Ice Dome so they could practise their skating. Then we went home for dinner. Made a lovely dessert, Strawberry and rhubarb crumble..
Higly recomended.. Yum Yum;)
Jordbaer og rabarbra Crumble
75 gram smor, delt i kuber pluss ekstra for smoring av form.
150 gram kveitemjol
75 gram lyst brunt sukker

Forvarm ovn til 180 grader. Smor lett ei form til paien.
Kok 450 gram kutta in bitar rabarbra med 75 gram sukker og ei spiseskjei vann i 5 minutter. Ta dette over i forma (viss det blir form mye vaeske, hell litt ut..) Ta 225 gram jordbaer, renska og delt i 4 over rabarbraen.
For Crumble toppingen, gni smor og kveitemjol sammen i ein stor bolle. (Ikkje for mykje for daa blir ikkje den spro nok..)
Ror inn sukker, og spre dette over rabarbraen. Bak i ovnen i 35 - 40 min.
Server med krem, is eller vaniljesaus.Lykke til!
Strawberry and Rhubarb Crumble
75g butter in cubes
150g flour
75g light brown sugar

Preheat the oven til 180. Butter a dish for the pai.
Boil 450g chopped rhubarb with 75g sugar and 1 table spoon of water for 5 minutes. Spoon this into the dish. Spread 225g strawberries, peeled and quartered over the rhubarb.
For the crumble topping, rubb butter and flour together in a big bowl. Stir in sugar, and put this over the rhubarb. Bake in the oven for 35 - 40 minutes.
Serve with cream, ice cream or custard. Good luck!

Its a boy! :))

Went to BabyScan yesterday, and found out its a boy!!! We are so happy, and got some lovely pictures where the baby was sucking his tumb and lying with his legs crossed. Sooo cute.. Marcus is gonna be so happy to get a little brother that he can teach to play hockey. Ellen Anna was a little bit disapointed that it wasnt a girl, but she will be fine.. She ADORES babies:) So now I have to look trough my boxes for little baby boy things.. Cant wait! Jippi:)
Reiste paa ultralyd igaar og fekk veta det er ein gut!! Me e so lykkelige, og me fekk noen kjempesote bilder kor babyen sutta paa tommelen og slappa av med beina i kross. Sooo sott.. Marcus kjem til aa bli so glad for aa faa ein liten bror han kan laera aa spela hockey. Ellen Anna var litt skuffa det ikkje var ei jenta, men det kjem ikkje til aa bli noe problem. Ho ELSKAR babyer:) So no maa eg gaa og kikke gjennom kassene mine etter guttebaby ting...

Banana pancakes in the sun..




Here in Ireland it was a bank holiday and the kids where off school, so we spendt the day at home just relaxing.. Nice! Long breakfast, tidying a bit in the house, working on the Tilda bunny for Lucys christening (that I'm planning to show yous tomorrow), dinner, playing in the garden and making one of our favourites - Banana Pancakes. They are so easy to make, good for you and the kids love them! I use the recipe from Rachel Allens Food for Living - wich I love and recommend.

Here's the recipee if anyone wanna give it a go!

Makes about 12 pacakes

150g plain flour
2 tsp baking powder
1/4 tsp bicarbonate of soda
25-50 (1-2oz) caster sugar
2 eggs
100-125ml buttermilk
25g butter, melted
2 small bananas, mashed
Sunflower oil

Sift the flour, baking powder and bicarbonate of soda together in a bowl.
Add the caster sugar and mix.

In another bowl whisk the eggs, then add the buttermilk and melted butter. Pour this into the dry ingredients, whisking as you add it in. The batter is ready to use now or may be stored in the fridge overnight.
Fold in the bananas just before you want to cook the pancakes.

Heat a large frying pan over a medium heat and oil it very lightly. Drop large spoonfuls of batter into the hot pan.
Cook for 1-2 minutes on the first side until bubbles apper on the upper surface, then turn them over and let them cook for a couple of minutes until golden brown.

And I got to try out my new Cath Kidston cups, and the tea tasted just that little nicer..;)

I am so lucky..


I am so lucky to have such great friends and to have 4 new lovely Cath Kidston cups..;)

My lovely friend Dara suprised me today with 4 lovely cups for the good news. I was so suprised and I love them! Thank you so much Dara! You are the best!:)


Here in Dundalk the day started with a bit of rain and it was a bit cold, but now the sun is shining and its just lovely.. Hope yous all had a great weekend!
