Banana pancakes in the sun..




Here in Ireland it was a bank holiday and the kids where off school, so we spendt the day at home just relaxing.. Nice! Long breakfast, tidying a bit in the house, working on the Tilda bunny for Lucys christening (that I'm planning to show yous tomorrow), dinner, playing in the garden and making one of our favourites - Banana Pancakes. They are so easy to make, good for you and the kids love them! I use the recipe from Rachel Allens Food for Living - wich I love and recommend.

Here's the recipee if anyone wanna give it a go!

Makes about 12 pacakes

150g plain flour
2 tsp baking powder
1/4 tsp bicarbonate of soda
25-50 (1-2oz) caster sugar
2 eggs
100-125ml buttermilk
25g butter, melted
2 small bananas, mashed
Sunflower oil

Sift the flour, baking powder and bicarbonate of soda together in a bowl.
Add the caster sugar and mix.

In another bowl whisk the eggs, then add the buttermilk and melted butter. Pour this into the dry ingredients, whisking as you add it in. The batter is ready to use now or may be stored in the fridge overnight.
Fold in the bananas just before you want to cook the pancakes.

Heat a large frying pan over a medium heat and oil it very lightly. Drop large spoonfuls of batter into the hot pan.
Cook for 1-2 minutes on the first side until bubbles apper on the upper surface, then turn them over and let them cook for a couple of minutes until golden brown.

Nam nam..;) Try and enjoy!
And I got to try out my new Cath Kidston cups, and the tea tasted just that little nicer..;)

  1. Åh så koselig dere har det ☀ Hærlige unger du har :O) Og så pannekaker i solen da *sukk*, nå lengter jeg etter sommeren :O))))) PS! De koppene var bare helt nydelige *ønske seg* Jeg har nett pått dilla på mummikopper og green gate service. Er så mye fint at en blir rent svimmel :O)) hehe. stor klemmmm :O)))

    Disse pannekakene skal jeg helt sikkert prøve en dag, tusen takk for oppskriften! Men skal tro om det er helt nødevndig med buttermilk? Kan man bruke vanlig melk i stedet for tror du?

    Ja, sant, te smaker bedre i fine kopper ;-)
